Relish Recipe: Hoppy Bunny Pancakes

On Easter day, a good breakfast is necessary to have enough energy for a successful egg hunt. Running through fields, carrying a basket and keeping your eyes open for hidden eggs is hard work! What’s more fun than a bunny made out of pancakes?! You will impress the kiddos and everyone will be hoppy!

Hoppy Morning Pancakes:

STEP 1:

Make your favorite pancake recipe.
We love this one:

Ingredients:

2 cups flour
3 TBSP sugar
½ tsp baking powder
2 eggs, beaten
¼ cup melted butter
1 ¾ cup milk

Directions:

Mix the flour, sugar and baking powder – set aside. Combine the eggs and melted butter to the milk and slowly stir into the flour mixture. Start heating the pan and let your batter sit for at least 10 minutes. Your pancakes will be high, but light and fluffy!!

STEP 2:

Pour the batter!
– Start with the ears and pour two oblong shapes.
– Pour a small circle for the head, and bigger circle for the body.
– Finally, make two small ovals for the feet; and stack all of your shapes on a plate.
– Garnish with banana slices for the paws and shredded coconut for the fluffy tail! You can also add some blueberries to make little toes!

Tip for success:

Use a measuring cup with a spout to pour the batter
